Vegan Chickpea PB Chocolate Chip Yummies


♦ 1 can organic garbanzo beans
♦ 2 cups all-natural peanut butter (hydrogenated oils will NOT work here)
♦ 1 cup organic dark chocolate chips
♦ 1 cup crushed pecans or walnuts
♦ 1/4 cup raw honey or maple syrup (I used melt-in-your-mouth New Zealand Manuka honey)
♦ 1/4 cup shredded coconut
♦ 1 cup organic raw cacao powder
♦ 1 tbsp virgin coconut oil
♦ 1 tbsp pure matcha green tea powder (for a little extra kick!)
♦ 1 tsp ground Himalayan sea salt
♦ 1 tsp baking soda


1) Wash hands (C'mon, I'm a doctor)
2) Preheat oven to 350°
3) Line cookie sheet with eco-friendly, non-toxic wax paper
4) Drain can of garbanzo beans & pat completely dry with clean towel
5) Blend all ingredients in a mixer until dough texture is smooth
6) Add chocolate chips & crushed nuts
7) Roll into golf-ball sized cookies and place onto lined sheet.
8) Bake in oven for 10 minutes.
